Valve Seat Grinding Stones have been around for a very long time. Back in the day there were roughing and finishing stones. This was because way back when seats were generally made from common cast iron or hardened steel. Two abrasive specs for the stone was all that was needed to properly grind the valve seat.
Grinding is really only done with steel. Aluminum, for the most part, plugs the stones, same with brass, and most of the other non-ferrous metals. Cast iron will grind, but it's so-so at best. Get a set of burrs for the softer stuff, faster cutting, and will won't plug up the same.

Sometimes valves leak and it becomes necessary to grind valve seats clean, lap valves smooth, and in doing so to "dress" the stone (prepare & true the stone's grinding surface angle) for use.
